This mold shares similarities with the white mold found on premium cheeses such as French brie or camembert, and it is safe for consumption.This delicious salchichon is a Spanish summer dry-cured sausage with a slightly tangy and nutty, and peppery taste. It is made from pork of the famed black-hoofed Iberico pig. The meat and fat are chopped in thin bits, seasoned with salt, pepper, spices such as nutmeg, and oregano.
