Glen Galang Bangus Dagupan Big (GG)

• Paksiw na Bangus (Stewed Milkfish in Vinegar) is a local favorite specially for those in the northern parts of Luzon. Traditionally cooked in a clay pot, the dish often needs no refrigeration because its vinegar content prevents against quick spoilage.
Ingredients:
• 1/2 kg bangus/milkfish, cut into pieces
• 2 pcs small eggplants, quartered
• 2 pcs small ampalaya/bitter gourd, quartered
• 2 cloves garlic, crushed
• 2 tbsp vegetabl or cooking oil
• 1 pc chili finger/siling panigang
• 1 pc thumb-sized ginger, cut into strips
• 1 tsp black peppercorn
• 1/2 cup vinegar
• 1/2 cup water
Instructions:
1. Sauté garlic, ginger and finger chili in oil.
2. Add bangus and the vegetables.
3. Pour in vinegar then simmer for 2 minutes.
4. Add water and simmer until fish is cooked.
5. Transfer on a serving plate and serve.
