• Recipes: Roasted Chicken Leg Quarters and Potatoes

Ingredients:
• 4 teaspoons pollo asada seasoning
• 4 teaspoons cider vinegar
• 4 chicken leg quarters
• 1 onion, thinly sliced
• handful of cilantro leaves
• 6 potatoes, peeled and sliced into ½ inch rounds
• 1 tablespoon extra virgin olive oil
• 1/2 teaspoon seasoned salt
• 1/4 teaspoon black pepper

Instructions:
1. Pat chicken dry with paper towels.
2. Brush each chicken leg quarter with 1 teaspoon vinegar
3. Sprinkle each with 1 teaspoon pollo asada seasoning.
4. Place in a covered dish or zip closure bag and top with a few of the slices of onion, and a handful of cilantro.
5. Place in refrigerator for at least two hours or up to 12.
6. When ready to cook, preheat oven to 425 degrees.
7. Arrange sliced onion over the bottom of a 9X13 inch pan.
8. Add ½ cup of water to the pan.
9. Place potatoes on top of onions, slightly overlapping.
10. Drizzle olive oil on top of potatoes.
11. Sprinkle with seasoned salt and pepper.
12. Arrange chicken leg quarters on top of potatoes.
13. Place in 425 degree oven for 1 hour.
14. Thighs, when pierced with a knife, will have juice that runs clear.
15. Separate thighs and legs before serving.
