Gruyere is a famous Swiss cheese, which is hard and with a slightly sweet, nutty flavour. Made from whole cow's milk it is used in all sorts of sandwiches and sauces.
Gruyere is an ideal cheese for melting, particularly for fondues where its rich flavour and texture work so well. It can also be used in gratins, pasta dishes, quiches, and dips, and is the basis for the French, Croque Monsieur.
