Eggplants are usually long, slender, and slightly curved at the end. It has a white flesh inside and a few seeds that are edible. It has a lot of fiber which are beneficial to heart's health! Packed with antioxidants that fights free radicals which damaged the cells.
Make your eggplant fancy by turning it into Eggplant Omelette! In a large bowl, beat 3 white Chicken eggs and add 1/4 tsp of salt, ground black pepper, 1/4 tsp of Garlic Powder. Beat until all mixtures are well mixed. Cook on top of your gas stove until the skin turns black. Put in plate and gently mash using a fork. Transfer to egg mixture and mix until the eggplant blends. Heat 4tbsp. of olive oil in a pan and pour once hot. Cook it in medium heat for 3-5 mins. Transfer to a serving plate and add chopped fresh Parsley herb on top!
